TONY'S MAYO

Ingredients: 1 table spoon Dijon mustard, 2 egg yolks, 1 table spoon lemon juice, 3/4 teaspoon River Murray Salt, freshly ground pepper to taste, 300ml olive oil

Method: All your ingredients need to be at room temperature before you start.

Place the mustard, egg yolks, lemon juice, salt and pepper into a good size mixing bowl. Then place the bowl on a tea towel (stops it slipping). Use a wire whisk, preferably a balloon one, and start to beat the oil into the egg mixture in a thin drizzle - very little at a time! After you have added approximately the same amount of oil as your original egg mixture you can then start to incorporate the rest of the oil a bit faster. You should have a nice, fresh glossy creamy emulsion. Fresh mayo is the best! No artificial additives! You can refrigerate but eat within 3 days of making. Why eat old mayo when you can have fresh? Should the mayo curdle, you can resucitate it. Place another yolk in a clean basin and whisk adding the curdled mixture a spoonful at a time.

Timo's Pancake Recipe

INGREDIENTS:
2 EGGS
2 CUPS BUTTERMILK (OR YOU CAN MIX MILK WITH BUTTER MILK, USE YOGURT AND EVEN LEFT OVER CREAM)
1 CUP PLAIN FLOUR
¼ CUP CASTER SUGAR (PRETTY MUCH TO TASTE, LESS IS OK)

METHOD:

  • SIFT FLOUR INTO A BOWL
  •  MAKE A WELL IN THE CENTER
  • BREAK EGGS INTO THE WELL
  • MIX INGREDIENTS TOGETHER
  • GRADUALLY ADD BUTTERMILK, UNTIL YOU HAVE THE CONSISTENCY OF A THIN BATTER
  • ADD IN THE SUGAR
  • HEAT UP FRYING PAN
  • SPRAY WITH OIL
  • WITH A LADLE POUR SOME BATTER INTO THE FRYING PAN – NOT TO THICKLY!
  • ALLOW BATTER TO COOK UNTIL IT STARTS TO BUBBLE A BIT
  • THEN -  DO THE MAESTRO FLICK – AND TURN IT OVER!
  • PLACE ON A WARM PLATE, WHILST YOU DO THE REST

ENJOY!

SERVE WITH : FRESHLY SQUEEZED LEMON/ORANGE JUICE OR HONEY OR ANY DELICIOUS HOME-MADE MARKET JAM!
